Simple Buffalo Chicken Pizza Recipe



My family is a big fan of pizza and buffalo wings, however wings and kids can be messy! So I came up with this simple yet delicious recipe to satisfy both. Give this recipe a try and soon it will become a family favorite.

This Buffalo Chicken Pizza Recipe Uses:
  • - Chicken marinated in a buffalo sauce
  • - Blue cheese dressing instead of a red sauce
  • - Two different types of cheeses
  • - Your favorite toppings
Here is how we make ours, but you can add or omit any of the toppings to suit your tastes. If you prefer, you can make your favorite pizza crust recipe instead of using the recommended refrigerated crust.
Ingredients:
  • - 1 can (13.8 oz.) refrigerated pizza crust
  • - 1 can (12.5 oz.) canned chicken, drained
  • - 1/2 cup buffalo sauce
  • - 2 Tablespoons of butter, melted
  • - 1/2 cup Blue Cheese dressing
  • - 1 cup Cheddar cheese
  • - 1 cup Mozzarella cheese
  • - 1 small red onion sliced
  • - 1 cup real bacon bits
  • - 1 cup banana peppers
  • - Garlic powder
  • - Onion powder
  • - Salt  


Directions:
Preheat oven to 450°F (220°C). Spray an 11x15 inch pan with non-stick cooking spray. In a medium bowl combine the chicken, hot sauce and melted butter. Set aside and let marinate. Pat pizza dough into prepared pan. Pierce the dough with a fork. Bake for 5 minutes. Remove from oven and spread blue cheese dressing over pre-baked crust. Sprinkle on cheeses. Place marinated chicken over cheeses. Top with red onion, real bacon bits and banana peppers. Sprinkle on a little garlic powder, onion powder and salt. Continue to bake for an additional 8 - 12 minutes or until crust is golden brown.

I'm back from Sunburst Tomato Farm in Momeyer, North Carolina. What a great trip! While I was learning about growing tomatoes in the winter, I was thinking about making a homemade pizza recipe to add to my cooking classes. But then, I thought, what does the local tomato farmer like to make with his fresh tomatoes? 

Tim Bass of Sunburst Tomatoes says he prefers the raw, natural flavor of his tomatoes in a Tomato Sandwich, "two slices of bread, some mayonnaise and a slice of tomato" is his favorite homemade tomato recipe.

Well, that might suit the tomato farmer, but Tim sent me home with a sack full of quality tomatoes and all I can think about is a homemade pizza recipe that I simply call "tomato pie". I don't use pizza sauce. No, instead, I use sliced tomatoes. But I'm jumping ahead in this cooking class, let's start with the crust.

This is my tried and true basic homemade pizza dough recipe: 18 ounces flour, 10 ounces water, 2 teaspoons of yeast. This will be the basis for the pizza crust that will then complete the standard 10 step yeast dough process.

You want to take time mixing the ingredients together, because you want for gluten to develop in the process. Moisture and agitation develop gluten which will help to develop that wonderful chewy crust that we've all come to expect and love in our pizza. After the pizza dough is mixed, you need to allow it to ferment until it doubles in size. At this point, knock all of the air out of the dough and allow it to rise again. Now, the homemade pizza crust starts to take form. Using a rolling pin and a thick marble* slab, flatten the dough to create the pizza crust.

*(Marble is a wonderful medium to use when you are dealing with dough or pastry because the thickness of the slab helps to keep the temperature consistently cool to create a better product.)

I like to use a pizza peel to get my pizza in the oven. I put a little bit of corn meal on the peel to help with the flavor as well as making it easier to get the pizza off of the peel when I'm ready to put it into the oven. Once the homemade pizza crust is on the peel, I like to go around the edge of the pizza crust folding over the edge to form the outer edge of the pizza. Also, brush on a little olive oil to ensure a nice brown crust and I like to add some freshly cut garlic as well.

Instead of a tomato sauce recipe, thinly sliced tomatoes will form the foundation of the tomato pie recipe, and this homemade pizza goes in the oven, on top of heated stones.

What? Only tomatoes on the homemade pizza?
No, I want more ingredients, but the tomatoes take longer to cook! Only after the tomatoes have cooked is the cheese and basil added. Basil is too delicate to allow it to bake for the same time as the tomatoes, so it's added at the very end in a fancy French knife skill called "chiffonade".

The best homemade pizza recipe is the one that uses the freshest, best ingredients, like tomatoes from your local farmer. Michelangelo Pizza recipes



Preparation: 40 minutes plus 2 hours rising
It's called Michelangelo Pizza, it is a very special pizza, garnished with mushrooms, sausage, peppers and red.

Ingredients:
* 550 grams of wheat flour
* 30 g fresh yeast
* virgin olive oil
* Salt

Sauce
* 350 g Mozzarella
* 250 grams of tomato paste
* ½ red bell pepper
* ½ green bell pepper
* 150 grams of fresh sausage
* 150 grams mushrooms
* 1 handful of fresh basil, oregano or powder (depending on your preferences)
* virgin olive oil
* Salt

Procedure:
First make the dough: dissolve the yeast in warm water, a pinch of salt water. Meanwhile, prepare a small volcano with the flour and water then the water with the yeast in the center of the volcano.


Add a little olive oil and then begin to knead it all: Your goal is a more elastic dough and soda, the right consistency. After the dough is ready to do a little ball and let go for about two hours in a shipping container with a hot towel, warm indeed.
When the dough has doubled, you can still prepare your pizza Michelangelo. With rolling pin, stretch the dough until it is thick, about 1 inch and a half. Then rub the pan with olive oil, lay down on the dough.
Now is the time of filling: Spread tomato sauce on pizza dough and on a crust of dough is about 2 cm to leave. Then add the mozzarella cut into thin slices and sprinkle over pizza. Then add the chopped fresh sausage and peppers cut into strips.
Then clean the mushrooms, wash with water and lemon juice, then heat with extra virgin olive oil and garlic heat. Once finished, put it on pizza. Finally, add a pinch of salt and a dash of oil.
Bake pizza in preheated oven at 200 degrees 15-20 minutes. After cooking, add fresh basil leaves and you garnish your good pizza. That's it!

Ingredients:
- 1 1/3 cup Warm water (105F)
- 1/4 cup Non-fat dry milk
- 1/2 teaspoon Salt
- 4 cups Flour
- 1 tablespoon Sugar
- 1 pk. Dry yeast
- 2 tablespoons Vegetable oil (for dough)
- 9 ounces Vegetable oil (3 oz. per pan)
- Butter flavored Pam

Sauce:
- 1 (8 Ounce) Can Tomato Sauce
- 1 teaspoon Dry Oregano
- 1/2 teaspoon Marjoram
- 1/2 teaspoon Dry Basil
- 1/2 teaspoon Garlic salt

Directions:
Put yeast, sugar, salt, and dry milk in a large (2 qt.) bowl. Add water and stir to mix well. Allow to sit for two minutes. Add oil and stir again. Add flour and stir until dough forms and flour is absorbed. Turn out on to a flat surface and knead for about 10 minutes. Divide dough into three balls. In three 9" cake pans, put 3 Oz. of oil in each making sure it is spread evenly. Using a rolling pin, roll out each dough ball to about a 9" circle. Place in cake pans. Spray the outer edge of dough with Pam. Cover with a plate. Place in warm area and allow to rise for 1 to 1 1/2 hours.
Sauce:
Combine ingredients and let sit for 1 hour.

For Each Nine Inch Pizza: 1. Preheat oven to 475F 2. Spoon 1/3 cup sauce on dough and spread to within 1" of edge. 3. Distribute 1 1/2 Oz. shredded mozzarella cheese on sauce. 4. Place toppings of your choice in this order: Pepperoni or Ham Vegetables Meats (cooked ground sausage or beef) 5. Top with 3 Oz. mozzarella cheese 6. Cook until cheese is bubbling and outer crust is brown.

  • - 1 thinly sliced green bell pepper
  • - 1 thinly sliced yellow bell pepper
  • - 1 thinly sliced red bell pepper
  • - 1/2 red onion (more, if desired), thinly sliced
  • - Extra virgin olive oil, as needed
  • - 10 whole garlic cloves (mmmmmmmm!)
Olive Garden Chicken Scampi Directions...
Scampi Sauce:
  1. - In medium saucepan, melt butter over low heat.
  2. - Add garlic, Italian seasoning, and crushed red pepper. Saute for 2 minutes.
  3. - Add wine, water, and chicken stock. Stir until well combined and simmer for 30 minutes, stirring occasionally.
  4. - Add white sauce and stir until slightly thickened, about 3-5 minutes.
The Rest:
  1. - Drizzle olive oil into the bottom of a small sautee pan over low heat.
  2. - When oil is warm, add garlic cloves and cover with lid.
  3. - Braise garlic for 15-18 minutes on low heat. Garlic should turn out soft and golden.
  4. - Drizzle olive oil into the bottom of a large saute pan over medium heat.
  5. - When oil is hot, add chicken tenderloins, turning when 1/4 of the way cooked.
  6. - When chicken is about half-way cooked, add bell peppers and onions. Saute for 2-3 minutes.
  7. - Add angel hair pasta, sauce, and garlic cloves. Saute until sauce is heated through and chicken is completely cooked, about 3 minutes.

  6. - Return pot to heat (med-high heat) and slowly bring to a boil, stirring constantly.

  7. - Add potatoes and seasonings. Reduce heat to low.

  8. - Let simmer for 10 minutes.

  9. - Add clams and let simmer an additional 6-9 minutes, stirring occasionally.

  10. - Stir in heavy cream. Let simmer another minute or two.

  11. - Serve in hot sourdough bread bowls or in your favorite cup or bowl.

My daughters and I made this, and they thought it was an absolute blast.  We raved about the dipping sauce.  It's got a great bold flavor that compliments the shrimp perfectly.  When you make it, you'll know what I mean!

Outback Steakhouse Coconut Shrimp - Ingredients:
  • - 1.5 lbs. large, raw shrimp
  • - .5 cup all-purpose flour
  • - .5 cup cornstarch
  • - 1 tbsp. salt
  • - .5 tbsp. white pepper
  • - 2 tbsp. vegetable oil
  • - 1 cup ice water
  • - 2 cups shredded coconut (short shreds)
  • - Oil for deep frying
Dipping sauce:
  • - .5 cup orange marmalade
  • - .25 cup Grey Poupon country mustard
  • - .25 cup honey
  • - 3 to 4 drops Tabasco pepper sauce (I like to use more!)
  • - Mix 'em all together!


Outback Steakhouse Coconut Shrimp - Directions:
  1. - Preheat oven to 300 degrees.

  2. - Peel, devein, and wash shrimp. Dry with paper towels and set aside.

  3. - In a large mixing bowl, combine all dry ingredients, except coconut.

  4. - Add 2 tbsp. oil and ice water. Blend well.

  5. - Add ample amounts of oil to deep fryer or deep skillet. Heat to 350 degrees.

  6. - Spread a thin layer of coconut on a plate.

  7. - Dip shrimp in batter, then roll in coconut (add more coconut as necessary).

  8. - Fry in hot oil for 4 minutes, or until light brown.

  9. - Drain shrimp, place on baking sheet, and bake an additional 5 minutes.

  10. - Enjoy with that incredible dipping sauce!
